Fruity Pebbles Cheesecake

         Kids of all ages will love this dessert. You will love how easy it is to make. The taste is different from what you would imagine. Trust me, I did actually turn my nose up at this one when I first heard of it. However, I am so glad that I did give this a try, I can now add it to the top portion of my favorites list.

            You all know that Fruity Rice Krispie cereal has a variety of colors in it. The cheesecake will have all those inside of the filling, but the crust is also made with it. Win-Win in my book. After learning more about this no bake dessert, it quickly became a must make in my household. Guys! There are even MARSHMALLOWS! How am I ever going to top that?

            Imagine this colorful dessert sitting in the center of a table for a birthday party! So colorful and filled with what kids like! It is a beautifully colored dessert. This recipe can be altered to fit the birthday person’s favorite cereal or cookies.

            Can I use a cereal other than Fruity Rice?

I am so hooked on this one, I have yet to try any other cereal. However, I do not know why Cocoa Rice Krispies would not work, or any other cereal for that matter.

            Could I use a graham cracker crust instead?

Yes, to do so use 2 cups of crushed graham crackers, ¼ cup sugar and 2 tbsp butter, melted. Press it down using the bottom of a measuring cup. For that fact, you could use a different cereal, wafer cookies or even chocolate sandwich cookies.

What do you need to make Fruity Pebbles Cheesecake

            Crust:

2 cups Fruity Rice Krispies

1 cup marshmallows

6 tbsp butter, unsalted

            Filling:

16 ounces softened cream cheese

1 envelope plain gelatin

1 cup powdered sugar

1 cup crushed Fruity Rice Krispies

1 cup whole Fruity Rice Krispies

How to make Fruity Pebbles Cheesecake

            For the Crust:

Melt the butter in a pan with the marshmallows

When both are melted, stir in the cereal and combine well

Press on the bottom of a baking dish, using your hands

Refrigerate for 20 minutes

            For the Filling:

Add the cream cheese to a mixing bowl and beat with an electric mixer

Add the powdered sugar

Add 1 cup of whole cereal

Combine the gelatin with water as directed, heat until the gelatin becomes liquid

As you continue to mix the cheesecake filling, slowly add in a stream of the gelatin and combine well

Pour the mixture into the pan with the crust

Sprinkle  the crushed cereal on the top

Chill in the refrigerator for 2 hours to fully set
