This is one of the hubby’s favorite meals. He would eat this every day if I would make it for him. All the flavors of your traditional stuffed peppers without all the hard work and in one skillet!
I did, however, find ways to let my hubby have this more often without the rest of us thinking ‘Again?’ Yes, you guessed it, change up the recipe and turn it into some different meal.
Stuffed green peppers are a traditional food eaten in most countries I am sure. This time the change happened because the power went out. I did not have the time to allow stuffed peppers to bake.
So I tossed it all in a skillet and called it good. I bet this travels all over the world as a quicker way to eat this traditional meal!

Can I trade out the ground beef?
You can use chicken, turkey or sausage. Any type of meat will work and taste great in this dish.
Can I freeze this dish?
This dish will freeze nicely for you. I always put a plastic wrap on it, then a layer of foil and then a tight cover so I do not risk freezer burn.
Can I use just green pepper?
I love it with green peppers, but it is truly beautiful with other colored peppers also. Use what you have on hand.
A great variation I like to use and my family absolutely loves is to mix in a packet of Taco seasoning when the beef is done cooking. I then add the other ingredients and it turns into a Mexican dish with a tiny kick.
One note to mention, you do not want to cook the rice ahead. As it cooks with the broth and all the flavoring in the skillet, it will soak up the flavors and taste phenomenal. It also utilizes all the beef broth in the skillet. Making this more of a solid dish rather than a soup style. You will be amazed at the ease of making this dish and about the flavor you get from it.
What do you need to make Stuffed Pepper Skillet
½ white onion, chopped
2 green bell peppers, chopped
2 cloves garlic, minced
2 cups beef broth
2 tbsp tomato paste
14 ounce can of petite diced tomatoes
¾ cup white long grain rice
1 pound lean ground beef
Salt and pepper to taste
1 ½ cup Monterey Jack cheese
How to make Stuffed Pepper Skillet
FIRST STEP:
Brown the ground beef in a large skillet, drain the grease from the pan
Add in the peppers and the garlic, cook for an additional 3 minutes

SECOND STEP:
Stir in the tomato paste, beef broth, rice and salt and pepper with the diced tomatoes, stir well

Bring to a boil for one minute, reduce heat to a simmer
THIRD STEP:
Simmer, covered for 18 to 20 minutes, until the rice is tender
Fluff the dish with a fork, top with the shredded cheese and return the cover, turn off the heat
FOURTH STEP:
Once the cheese has melted
