Heavenly Pineapple Cheeseball

            This cheeseball recipe is always one of the biggest hits at any gathering and every party. We cannot allow the combination of foods to gross us out. This would not be one of my favorites if it tasted disgusting. So bear with me and give this a try. I had actually received this from a very dear friend. His mother used to make it for the family on special occasions. When she passed on, he wanted to pass on one of her best and favorite recipes.

            With the mixture of different textures, this will be a hit at your next get together also. You know that pineapple just screams out summertime! Can you hear it? This will give you a slightly sweet, slightly salty taste, that is something that can satisfy even the pickiest of people. So give the combination a try before screaming at me.

            You may think that this recipe and the cheeseball are a little outdated. Besides the couple of items that I tweaked, it is a great recipe that is meant to be shared. Outdated or not, tried and true recipes are just that! Tried and true!

You can make it ahead of time and store it in the refrigerator, covered tightly, for up to three days.

Is there a difference between using green onion or shallots?

Definitely a big difference. You want to use shallots where it calls for it. Using green onion will give it more of a flavor experience.

I do not like Green Pepper, can it be left out?

Certainly, I would never make you eat something you do not like. Choose a vegetable that you like and replace the green peppers.

How long should I let the cream cheese sit out for?

You really want it to be room temperature. It will mix a lot smoother when it is not cold.

How long can I leave the cheeseball out on the table during a party?

The best time alotted is up to two hours sitting out. If needed, keep refrigerated until the very last minute.

What should I serve this on?

Any type of cracker, or make it a variety of crackers and let the guests choose their own.

What ingredients do you need for Heavenly Pineapple Cheeseball

            2 packages of softened and room temperature cream cheese.

            1 can crushed pineapple, drained very well

            ½ cup chopped green onions

            ½ cup chopped green pepper

            1 tsp seasoning salt

            1 tsp lemon pepper seasoning

            2 cups pecans, chopped nicely

           Assorted crackers

How to make Heavenly Pineapple Cheeseball

FIRST STEP:

In a large bowl, beat the cream cheese until it is smooth

Gently fold in the vegetables

SECOND STEP:

Add the seasonings

Add ½ cup chopped pecans

THIRD STEP:

Place this on a sheet of plastic wrap, roll and shape the cheese into a ball.

Refrigerate overnight

FOURTH STEP:

Just before serving, roll the ball into the remaining chopped pecans

Set the ball onto the center of a plate and surround it with a variety of crackers
