Can you say that meatballs are a God Send? These definitely are. They are a home made version of some famous meatballs. I won’t mention whose, because I just improved it. These meatballs are super juicy, soft and have a hint of some of the world’s best spices, nutmeg and All spice. I had always considered those only for Christmas baking. I did venture out of my safety zone a couple of times and use nut meg in some new recipes, they turned out good, not great.
However, to have an authentic flavor to Swedish meatballs these two spices are a must. Oh yeah, they also sit in some super creamy and tasty gravy, that no one can resist.
Once you make these meatballs, you are not going to want to go for the cheap store meatballs ever again. This recipe came from my actual Swedish Grandma herself. There is none more authentic than this recipe.
Tradition is a major thing for so many Swede’s. These meatballs rank just as high in the book of important things in a Swede’s life. So many of us are hooked on brown gravy or another type of gravy. I usually bake a few potatoes, boil some or make some mashed potatoes. You want something to go along with the meat that will soak up the gravy flavor too.
I need a lower carb version, what can I do?
I suggest using almond meal to replace the breadcrumbs. For the gravy, substitute cornstarch at 1 tbsp mixed with 2 tbsp of water. This will eliminate the flour in the gravy.
What ingredients do you need for Truly Authentic Swedish Meatballs
3 pounds lean ground beef
1 medium onion, diced fine
1 cup seasoned bread crumbs
2 eggs beaten
½ cup fresh, flat leaf parsley, chopped
2 tsp coarse ground salt
1 tsp coarse ground pepper
Gravy:
4 tbsp all purpose flour
21 ounces of beef consomme
1 tsp coarse ground salt
1 tsp coarse ground pepper
1 tbsp Worcestershire sauce
2 cups of milk
How to make Truly Authentic Swedish Meatballs
FIRST STEP:
Heat a large skillet over medium high heat
Mix the beef, breadcrumbs, salt, pepper, eggs, onion and chopped parsley by hand, until it is combined well
SECOND STEP:
Form 1 inch meatballs and place in the skillet. Brown on all sides.
Remove the meatballs from the pan and set on a plate to the side.
THIRD STEP:
In same pan, with the fat still in there, add the flour and mix until wmooth and well combined
Add the consomme along with the worcestershire sauce and use a whisk to beat.
FOURTH STEP:
Slowly add the milk while continuously whisking. Add in the salt and pepper. Do not stop beating until the mix is completely combined
Cook for 5 minutes, stirring constantly
FIFTH STEP:
Add the meatballs back into the pan, cover and let cook for 15 minutes on medium heat
Cover the potatoes or macaroni with the meatballs and the gravy. Sprinkle with parsley.
