Loaded Chicken and Potatoes

         This meal is going to give you happiness. It has loads of chicken and potatoes, covered in bacon and cheese. What could be better than that? When you are having a super busy week, or there are new people in the neighborhood that you want to bring a meal to, this is the one you should make.

My favorite vegetable to serve with this dish is green beans smothered in parmesan cheese. My husband like to grill some asparagus and serve it after drizzling lemon juice on it. There are so many possibilities to have as a side dish, I couldn’t come close to mentioning them all.

            This is a comfort food to bring smiles to everyone’s face. Chicken and potatoes go together as a perfect combination.

This meal is super easy to prepare, prep your chicken, peel and chop your potatoes, season it all and pop into a baking dish.

            Can I freeze the leftovers?

The leftovers, if you have some, will be good in the freezer in an airtight container. They will also be good in the refrigerator for 3 to 4 days.

            Can I add some spice to this dish to create heat?

If your family likes it hot like my husband does, feel free to add some red hot sauce or cayenne pepper.

            What type of potatoes work best in this dish?

I prefer to use Red potatoes and cut them into cubes. Russets could be used also. If you prefer, make the dish with a couple of sweet potatoes along with the Reds.

            Can I add vegetables to the dish, or are they best on the side?

I have made this dish with green beans at one time. That was fantastic! I tend to just roast some vegetables on the side now.

What do you need to make Loaded Chicken and Potatoes

            6 to 8 Red potatoes, leave the skin on and cube the potatoes

            1 ½ pounds of chicken breast, cubed into bite size pieces

            1/12 tsp salt

            ⅓ cup Olive Oil

            1 tsp black pepper

            1 tbsp Paprika

            2 tbsp Hot Sauce

            2 tbsp Garlic Powder

            1 cup bacon, cooked and crumbled

            1 cup green onion      

            2 cups shredded cheese, Cheddar and/or Mozzarella

How to make Loaded Chicken and Potatoes

FIRST STEP:

Preheat the oven to 400*

Lightly spray a baking dish with Olive oil

SECOND STEP:

Mix together the salt, pepper, garlic powder, paprika, Olive oil and the hot sauce

Put the chicken cubes and the potatoes into the bowl and stir to coat well

THIRD STEP:

Pour the chicken mixture into the baking dish

Bake for 45 minutes, stirring every 15 minutes

FOURTH STEP:

Bake until the meat and potatoes are done, crispy and lightly browned

While baking the food, fry up the bacon, set aside to cool

FIFTH STEP:

When the casserole is done, sprinkle with green onion and crumbled bacon

Sprinkle the cheese on the top and return to the oven.

Bake until the cheese is melted.
