            My inspiration for this recipe came from a movie I watched a long time ago, The Princess Bride. The giant needed to get his partner sober so he was hand feeding him stew. This recipe is based on what I remember seeing of the stew.

            Stew is one of those rare meals that is filling, but warms you up. It has an intense combination of flavors combined. It is super easy to prepare and easier to make.

The choice of vegetables can change from person to person. Stew is also an economical way of feeding your family. This recipe will feed five people. I priced it out by buying only the amount I needed for this recipe, are you ready?

I fed 5 people a filling and hearty stew for a total of $6.25!! That is what I mean by economical. If I would have bought a large bag of potatoes and carrots, and a roll of ground beef, the total would be even lower than that.

            Can I add other vegetables?

I am not sure if you mean more vegetables or just different. Either way, yes, you certainly can. I would go for the vegetables that are in season at the time, iif shopping for the ingredients. If you have a variety already at home, please use them. I have seen this made using sweet potatoes, green beans and corn. The colors were phenomenal. The flavor was outstanding.

            Can I make this ahead of time?

You can prepare the beef by cooking it. Prep the vegetables by slicing or cutting them. It can all be stored in the refrigerator a day ahead of cooking.

            Why is it called Poor Man’s Stew?

No intriguing reason, really. It is made with ground beef rather than a sirloin steak or other cut of steak. Cheaper meat means cheaper cost that anyone can afford.

            Can I freeze the stew?

The stew can be scooped into zippered freezer bags and kept in the freezer for up to two months. When ready to use, place the freezer bags into the refrigerator to thaw out overnight.

What do you need to make Slow Cooker Poor Man’s Stew

            1 ½ pounds of potatoes, I use Russets

            3 carrots, peeled and sliced

            1 onion, chopped

            1 pound ground beef, cooked and fat drained off

            2 cups of water

            1-6 ounce can of tomato paste

            1 clove minced garlic

            Salt and pepper to taste

            1 tsp dried oregano

            1 tsp onion powder

How to make Slow Cooker Poor Man’s Stew

FIRST STEP:

In a dutch oven or skillet, cook the ground beef until it is done, drain the fat

In the slow cooker add the ground beef, potatoes, carrot, onion and the garlic

SECOND STEP:

In a small bowl mix together the dried spices

Whisk together the tomato paste and the water, then combine with the dried spices

THIRD STEP:

Then pour this mixture over the meat and vegetables in the slow cooker

Put the cover on the slow cooker

Cook on low for 7 hours

Serve the stew with buttered sandwich bread
