I fed 5 people a filling and hearty stew for a total of $6.25!! That is what I mean by economical. If I would have bought a large bag of potatoes and carrots, and a roll of ground beef, the total would be even lower than that.

I am not sure if you mean more vegetables or just different. Either way, yes, you certainly can. I would go for the vegetables that are in season at the time, iif shopping for the ingredients. If you have a variety already at home, please use them. I have seen this made using sweet potatoes, green beans and corn. The colors were phenomenal. The flavor was outstanding.
Can I make this ahead of time?
You can prepare the beef by cooking it. Prep the vegetables by slicing or cutting them. It can all be stored in the refrigerator a day ahead of cooking.
Why is it called Poor Man’s Stew?
No intriguing reason, really. It is made with ground beef rather than a sirloin steak or other cut of steak. Cheaper meat means cheaper cost that anyone can afford.
Can I freeze the stew?
The stew can be scooped into zippered freezer bags and kept in the freezer for up to two months. When ready to use, place the freezer bags into the refrigerator to thaw out overnight.

1 onion, chopped
1 pound ground beef, cooked and fat drained off
2 cups of water
1-6 ounce can of tomato paste
1 clove minced garlic
Salt and pepper to taste
1 tsp dried oregano
1 tsp onion powder

In a dutch oven or skillet, cook the ground beef until it is done, drain the fat
