Remember as a kid, walking into the fairgrounds each summer and smelling all those delightful food aromas? The one that attracted me all the time was the one that looked pretty on the plate when served. No matter how hungry I was, I waited to ask for fair food until I saw the funnel cake trailer.

Funnel cakes are like fancy, sweet pancakes. They look awesome when they have all those swirls, and then the choice of toppings. I can eat them plain or with any topping, as long as I have funnel cakes!

This is the fun size version of a fair favorite food. The big difference is that these are easy to carry with you without worrying about the spilling aspect. This is a simple recipe for a favorite powdered sugar dessert. Mini Funnel Bites are a favorite summer treat at my house.

As you already know, funnel cakes are fluffy inside and lightly crispy on the outside. On a lazy family time weekend, these are the perfect treat to make. It perks me up to just think about enjoying bite size funnel cakes. These gave me the courage to make hopes, dreams and work be accomplished last weekend.

Suggested Toppings:

            Powdered Sugar (very common)

            Strawberries

            Caramel Sauce

            Chocolate topping

            Fruit Pie Filling

            Maple Syrup

            Pancake syrup

Can I store the mini funnel bite batter?

The batter can easily be stored in the refrigerator in a tightly closed container. It will be good for up to 5 days.

Can I store the mini Funnel Bites?

Store in an airtight container. The bites will remain good for up to 5 days, but are best to eat right away.

What ingredients do you need for Mini Funnel Bites

            ¼ tsp salt

            1 cup milk

            1 tsp vanilla extract

            1 tsp baking powder

            2 large eggs

            1 tbsp granulated sugar

            1 ¾ cup all purpose flour

            Powdered Sugar for sprinkling on the mini funnel bites

How to make for Mini Funnel Bites

FIRST STEP:

Beat the eggs until they are foamy

Add the milk and the vanilla and continue beating

SECOND STEP:

Mix in the flour, sugar, baking powder and salt, combine until smooth

Heat oil, ¾ inch in depth, in skillet

THIRD STEP:

Using a small cookie scoop, pour batter into the hot oil

When golden brown, flip and fry second side

FOURTH STEP:

Drain on some paper towels

The oil should be heated to a temperature of 375*

FIFTH STEP:

When ready to serve, have optional sauces or toppings available for your family or friends to choose their favorites.

You can also top with a whipping cream. Serve at breakfast with a variety of pancake syrups.

SIXTH STEP:

When serving at breakfast, prepare bacon and sausage, scrambled eggs and make it a complete and filling meal for your group.

These can be prepared and taken on the run.

SEVENTH STEP:

Place them in a bento container with toppings and assorted fresh fruit for a refreshing breakfast. They make a great lunch snack also.
