            These little red delights make any dinner a win for you! Being a meat and potatoes family, my go to side dish usually has something to do with potatoes. However, I love my carbs so half the time, I will switch it up and make a pasta dish as a side. Potatoes, though, will always be number one with me!

It does not matter if they are red potatoes, like this recipe, Russets, yukon gold, sweet potatoes or a combination. I love my potatoes.

            No lie, these Parmesan roasted potatoes are my addiction lately. I can get them together and in the oven baking while I prepare the rest of the meal.

They are so easy to do and the taste is excellent! The best part, it does not matter what the main course for dinner is! These little gems go with anything!

            Can I use a different type of potato?

I love to use Red potatoes in this dish because they are lower in calories and they hold up better since they are known as a waxy type of potato.

            Can I use this recipe if I choose to smash the potatoes after roasting?

Yes! These potatoes taste great no matter how you eat them. I did smash them last time I made them and then sprinkled some more onion soup mix and parmesan on the tops.

            Can I add another cheese?

You could add another cheese during the last few minutes of baking time if you want. I have used shredded Colby Jack and also shredded mozzarella on these potatoes. Both ways taste super good!

            Do I have to use freshly grated Parmesan Cheese?

No, I use it because my family and I like the fresh taste better. You can certainly use already grated parmesan cheese.

            Can I bake them uncovered the entire time?

Yes, turn your heat in the oven down so that the seasoning does not burn. The cover allows the potatoes to roast without heating the powdered seasonings up too much. If you leave uncovered with the heat lower, you will need to extend the baking time a little also.

What do you need to make Parmesan Roasted Red Potatoes

            2 pounds of red potatoes, washed and quartered

            Salt and Pepper to taste

            ⅓ cup olive oil

            1 packet of onion soup mix

            ½ cup freshly grated Parmesan cheese

How to make Parmesan Roasted Red Potatoes

FIRST STEP:

Wash and cut the Red potatoes into quarters

Preheat the oven to 350*

SECOND STEP:

In a large ziploc bag, put the salt and pepper, the onion soup mix, and the grated Parmesan cheese

Place the oil in another ziploc baggie and toss the quartered potatoes in to coat them evenly

THIRD STEP:

Then place the potatoes into the dry mix baggie and shake to coat evenly

FOURTH STEP:

Place the potatoes in a 9 x 13 baking dish

Cover the baking dish with aluminum foil

FIFTH STEP:

Bake for 35 minutes

Uncover and bake for another 15 minutes. This allows the potatoes to get a little crispy on the outsides.

When done, you can sprinkle parsley or chopped green onions on

Serve with sour cream, if desired

  • 2 pounds of red potatoes, washed and quartered
