Can I use this recipe if I choose to smash the potatoes after roasting?
Yes! These potatoes taste great no matter how you eat them. I did smash them last time I made them and then sprinkled some more onion soup mix and parmesan on the tops.
Can I add another cheese?
You could add another cheese during the last few minutes of baking time if you want. I have used shredded Colby Jack and also shredded mozzarella on these potatoes. Both ways taste super good!
Do I have to use freshly grated Parmesan Cheese?
No, I use it because my family and I like the fresh taste better. You can certainly use already grated parmesan cheese.
Can I bake them uncovered the entire time?
Yes, turn your heat in the oven down so that the seasoning does not burn. The cover allows the potatoes to roast without heating the powdered seasonings up too much. If you leave uncovered with the heat lower, you will need to extend the baking time a little also.

2 pounds of red potatoes, washed and quartered
Salt and Pepper to taste
⅓ cup olive oil
1 packet of onion soup mix
½ cup freshly grated Parmesan cheese
How to make Parmesan Roasted Red Potatoes
FIRST STEP:
Wash and cut the Red potatoes into quarters
Preheat the oven to 350*
SECOND STEP:
In a large ziploc bag, put the salt and pepper, the onion soup mix, and the grated Parmesan cheese
Place the oil in another ziploc baggie and toss the quartered potatoes in to coat them evenly
THIRD STEP:
Then place the potatoes into the dry mix baggie and shake to coat evenly
FOURTH STEP:
Place the potatoes in a 9 x 13 baking dish
Cover the baking dish with aluminum foil
FIFTH STEP:
Bake for 35 minutes
Uncover and bake for another 15 minutes. This allows the potatoes to get a little crispy on the outsides.
When done, you can sprinkle parsley or chopped green onions on
Serve with sour cream, if desired
