Sliced Baked Potatoes

         These potatoes are baked Hassleback style. This means that before they are baked. They are sliced on the top, into vertical slices. Then they are roasted until they are a golden color. This is perfection on a dish. Potatoes are the perfect accompaniment for any meat dish. There are so many ways that the lonely potato can be cooked.

            If you want a crispier tasting potato, cut the slices at an angle in both directions. This will become a waffle look pattern. Potatoes can be topped with a wide variety of toppings also. There is no end to the list. There is gravies, butter, sour cream, dressings, salsa, and even vegetables.

These Sliced Baked potatoes can be eaten plain or topped with your favorites. You could set up a bar of sorts so that everyone at the table can choose their favorite toppings.

I know in my house we go from Ranch dressing to salsa, sour cream to just butter, and plain to ketchup. So if you set up a tray with each wanted topping, they can help themselves.

            Can I use Sweet potatoes?

Of course you can! Sweet potatoes are a healthy and delicious potato to use in this side dish.

            Should I spray or line the baking tray?

You can line it with parchment paper, not waxed paper. I have been known to spray a light coating of non-stick spray directly onto the parchment to ensure nothing sticks.

            Can I replace the Olive Oil?

You can use any type of oil you have on hand. I have used Olive oil, Canola oil and vegetable oil in the past.

            Do I cook these on the highest shelf in the oven?

No, I usually put all my food on the middle shelf in the oven. There is consistent cooking and heat surrounding the tray.

            How do I store these?

Not that I expect any left over from dinner, but they can be placed into an airtight container and kept in the refrigerator for up to 4 days. To freeze, place in an airtight ziploc bag and set in the freezer. They will last for 3 months.

What do you need to make Sliced Baked Potatoes

            4 medium potatoes, Russet is what I used

            ¼ tsp salt

            ⅛ tsp pepper

            ⅛ tsp cayenne pepper

            ⅛ tsp garlic

            ⅛ tsp paprika

            4 to 6 tbsp olive oil

How to make Sliced Baked Potatoes

FIRST STEP:

Wash and dry the potatoes

Slice the potato no more than halfway down side to side. (you can also do the slices at angles to get a crispier potato)

SECOND STEP:

Preheat the oven to 400*

Mix the seasoning all together.

Combine well

THIRD STEP:

Spritz the potatoes with olive oil

Sprinkle the seasoning mixture evenly over the potatoes

FOURTH STEP:

Set the potatoes on a parchment lined baking tray

Bake 40 to 45 minutes

Notes

Another way of seasoning these potatoes is to add all the seasonings to a ziploc bag and then add in the potatoes that have been sliced. Shake the bag to season each of the potatoes and then set them on the baking tray.
