You can use any type of oil you have on hand. I have used Olive oil, Canola oil and vegetable oil in the past.
Do I cook these on the highest shelf in the oven?
No, I usually put all my food on the middle shelf in the oven. There is consistent cooking and heat surrounding the tray.
How do I store these?
Not that I expect any left over from dinner, but they can be placed into an airtight container and kept in the refrigerator for up to 4 days. To freeze, place in an airtight ziploc bag and set in the freezer. They will last for 3 months.

¼ tsp salt
⅛ tsp pepper
⅛ tsp cayenne pepper
⅛ tsp garlic
⅛ tsp paprika
4 to 6 tbsp olive oil
How to make Sliced Baked Potatoes
FIRST STEP:
Wash and dry the potatoes
Slice the potato no more than halfway down side to side. (you can also do the slices at angles to get a crispier potato)
SECOND STEP:
Preheat the oven to 400*
Mix the seasoning all together.
