Breakfast is the most important meal of the day, so they say. I have convinced myself and my family that I am the queen of breakfast. However, dessert comes in a very close second.

            I have seriously eaten thousands of pancakes over my lifetime, these are literally the best tasting pancakes I have ever had. With the loaded flavors of sweet and tangy, a little salt  you may not even want to smother them with syrup. I have used fresh fruit, with the sauce as a topping. I seriously can not say enough about these Buttermilk pancakes. The secret is using buttermilk. That makes them flavorful and fluffy.

            So many think that the only way to make pancakes is to buy the mix in a box at the supermarket. That is so wrong. The most delicious pancakes are those that are homemade and super fresh. Throw away that notion of buying pancake mix and see how easy it really is to make light and fluffy, tasty pancakes. I would recommend that you allow the pancake batter to sit for a few minutes after mixing it.

            Buttermilk pancakes can be eaten plain or covered with any number of fruit toppings. Pure maple syrup is perfect for these pancakes. I will usually have strawberries, blueberries, peaches and apple pie fillings available if I am feeding a crowd. I also have a variety of syrups alongside the pure maple syrup. These include, apricot, blueberry and sometimes my mom’s homemade syrup.

            Be sure to have a plate of bacon, breakfast sausage and some fried ham available. Everyone likes to have meat along with their pancakes

            Can I use regular milk?

If you are out of buttermilk, you can make it yourself by adding two teaspoons of vinegar to a cup of milk. Allow it to sit for a few minutes and you will have buttermilk. Using regular milk is not going to give you the moist and fluffy taste you want.

            Can I use almond or wheat flour?

You most certainly can. That would make it a healthier option also.

            I still have lumps in my mix, why?

Do not stress out over the small lumps that remain. It is difficult to get the batter smooth and lump free without over mixing it. When you over mix, it creates too much gluten in the mix.

            1 ⅛ cups Buttermilk

            1 egg

            2 tbsp butter, melted

            1 cup all purpose flour

            1 tsp salt

            1 tsp baking powder

FIRST STEP:

Preheat and lightly grease a pancake griddle

Mix the flour, baking powder and salt together in a bowl

Add in the beaten eggs, melted butter and the buttermilk

Stir together lightly. There will be lumps in the batter.

Spoon approximately ⅓ cup of batter onto the heated griddle, spreading very lightly

Cook for 1 to 2 minutes per side.
