Banana Pudding Stuffed French Toast

This is a breakfast to make to celebrate making it through another work week. It is a combination of simple french toast combined with a sweet treat. And, tell me who does not love bananas? This breakfast meal can be made any day of the week, in all actuality.

This does take a little bit of time, but  the flavor is more than worth the effort put in. I do prefer to make this on the weekends when I have more time in the mornings.

I will say that there are many different choices that can be used and made into this breakfast meal. Apples, blueberries, blackberries, virtually any type of fruit.

You could also use different combinations of fruit and pudding. I most often use vanilla pudding when I use a fruit other than bananas.

            How do I store this?

To be honest, I only make the amount that I am sure will be eaten. However, if needed, I place any that is left into an airtight container or wrap tightly in plastic and then place into the refrigerator.

            What type of bread is best for this?

You could use any type you choose, I prefer to use Brioche or french bread.

            Can I freeze any that is left?

My suggestion is that you only make the amount that you need. Once this is made, the pudding is in the bread, I cannot guarantee how the pudding will hold up after freezing.

What do you need to make Banana Pudding Stuffed French Toast

            Filling:

                        1 small box of instant banana pudding mix

                        2 cups cold milk

                        ½ cup Cool Whip Whipped topping

French Toast:

            6 slices, thick, brioche bread or similar type

            1 cup of milk

            2 eggs

            1 tsp vanilla

            ¼ tsp salt

            Butter to fry the bread

Garnish:

            Banana slices

            Cool whip topping

            Maple Syrup

How to make Banana Pudding Stuffed French Toast

FIRST STEP:

In a medium bowl, mix the pudding mix and the milk together.

Fold in the cool whip with the pudding

Place into a piping bag

In a shallow bowl, beat together the eggs and milk, vanilla and salt

SECOND STEP:

Make a slice in the center of the bread slice so you can stuff the bread

THIRD STEP:

Spoon a small amount of the pudding into the slice on the side of the bread

Dunk both sides of the bread into the egg mixture and place into the skillet with melted butter

FOURTH STEP:

Fry each slice of bread for two minutes on each side, using medium temperature setting

To serve, place a dollop of Cool Whip onto the slice, place a few slices of banana and then drizzle maple syrup over the top
