Can I use white and dark meat, or just the chicken breast?
Honestly, I have had it both ways, and I really do not see or taste a difference in the salad, other than the white or dark meat. Dark meat is a touch juicier in my opinion.
Do I have to use red grapes?
The red seedless grapes add color to the salad and there is just a hint of different flavor to the red grapes.
What type of nut is best to use?
I always use pecans. I believe the pecans give the chicken an added flavor. You could use walnuts if you chose to.

½ cup chopped pecans
2 cups Red Seedless grapes, halved
¾ cup mayonnaise
¼ cup Fresh Italian Parsley
