Chicken and Grape Salad

If you have never had a Chicken with Grape salad before, you have been missing out on heaven! This salad is eaten cold, it is refreshing, filling and delicious. I dare to say, comfort food.

For me comfort food is always hot like casseroles, soups or old fashioned roast and potatoes. However, this Chicken with Grapes salad is the first time I have ever said a cold salad is comforting.

Maybe it is the chicken, grape texture combination, maybe it is the nuts that most of us add to the Chicken Grape salad.

This salad is so simple to make and so utterly delicious, just thinking about it makes my mouth water! This is one you have to try!

Frequently Asked Questions:

            Can I use white and dark meat, or just the chicken breast?

Honestly, I have had it both ways, and I really do not see or taste a difference in the salad, other than the white or dark meat. Dark meat is a touch juicier in  my opinion.

            Do I have to use red grapes?

The red seedless grapes add color to the salad and there is just a hint of different flavor to the red grapes.

            What type of nut is best to use?

I always use pecans. I believe the pecans give the chicken an added flavor. You could use walnuts if you chose to.

What do you need to make Chicken and Grape Salad

            4 to 5 cups Chicken breast, diced

            ½ cup celery, finely diced

            ½ cup chopped pecans

            2 cups Red Seedless grapes, halved

            ¾ cup mayonnaise

            ¼ cup Fresh Italian Parsley

            2 tbsp dill, fresh

            Salt and pepper to taste

How to make Chicken and Grape Salad

FIRST STEP:

Cube the chicken and place into a large bowl

Add the celery, halved grapes, pecans, salt and pepper, dill, Italian parsley and the mayonnaise

Stir to combine well

The salad can be used on croissants, sandwiches, pita bread, wraps or even eaten plain
