This Ginger Cake is a type of Spice Cake, but this cake relies on the Ginger to give it all the flavor that you enjoy. This is also different due to the fact that there is not frosting on this cake. Spice Cakes generally are covered with a Buttercream frosting that just sends the great flavor over the top!

This delicious Ginger Cake has a Crumb topping on the cake. This gives the cake the ability to be the star rather than the frosting.

There is something special about a crumb topping on top of a dessert, it makes it even more special.

Yes, in a sense. You will put some of the mixture on the bottom of the baking pan before you pour the batter on it. When you serve the cake, it will have the crumb topping on the top.

Simply place a cookie tray over the cake once it has cooled for a short time. In one swift motion, flip the cake and pans over so that the cake pan is upside down on the top.

Be sure the cake is covered tightly with plastic wrap or placed in an airtight container. The cake should remain in the refrigerator and will stay fresh for up to 4 days.

            2 cups sugar

            4 cups flour

            2 ½ cups Butter, cubed

            ½ tsp ground ginger

            ¼ tsp cloves

            ½ tsp Cinnamon

            ½ tsp nutmeg

            1 cup PLUS 2 tbsp Buttermilk

            1 ¼ tsp baking soda

            2 Eggs

            ½ cup Powdered Sugar (for garnish)

How to make Homemade Ginger Cake

FIRST STEP:

Preheat the oven to 350*

Liberally grease a 9×13 inch baking pan

Add the flour and the sugar to a large bowl

Cut in the butter cubes with the flour and sugar

SECOND STEP:

Reserve 2 cups of this mixture, set to the side

In the same bowl, combine the remaining ingredients and beat together

Sprinkle half of the crumb mixture on the bottom of the pan

Carefully pour the batter over the top of the crumb mixture

Top with the remaining crumb mixture

THIRD STEP:

Bake for 35 to 40 minutes, until a knife comes out clean

Sprinkle with Powdered Sugar and then cut into squares to serve
