Multi Colored Potatoes with Pork Chops

Anytime I come across a recipe that involves a single dish for cooking, I know it is a recipe that I need to try. I was not wrong with this recipe. I did change up the potatoes, but for the most part it is a great recipe, seasoned perfectly and super easy to make.

I used baby potatoes that were red and russet or Yukon Gold. I love the way they come out so creamy and delicious.

This dish has pork chops and you could use bone-in or boneless chops for the dish. Make a side of vegetables or a dinner salad on the side and you have a quick and easy dinner.

The potatoes have the right amount of crunch to them and you are going to love the flavor of the potatoes with the Pork Chops.

            What type of potatoes are the best to use?

I use the baby reds with Yukon Gold. I cut these in half and tossed them in Olive Oil. Once on the baking sheet, I sprinkle lightly with Salt and pepper.

            What type of sides go well with the Pork Chops?

I have made an assortment of vegetables to go along with the Pork Chops, I have also made Sweetened carrots, steamed Broccoli and at times have added just a simple dinner salad.

            How can I store the leftovers?

The food does need to be cooled to room temperature and then placed into an airtight container. You can store the container in the refrigerator for up to 4 days.

            Can I freeze this dish?

You can place the cooled food in a freezer safe container and then set it in the freezer for 3 months.

            6 Boneless Pork Chops

            4 cups baby potatoes, cut in half

            ½ cup Parmesan Cheese, shredded

            ½ cup Butter, melted

            ¾ cup Breadcrumbs

            1 tsp Italian Seasoning

            1 tbsp Olive Oil

            1 tsp Salt

            ½ tsp Black Pepper

How to make Multi Colored Potatoes with Pork Chops

FIRST STEP:

Preheat the oven to 400*

Cover a rimmed baking tray with aluminum foil and spray with a nonstick spray

Cut the potatoes in half and place in a bowl

Add the Olive Oil to the bowl and toss the potatoes

SECOND STEP:

In a medium bowl combine the Italian Seasoning, Breadcrumbs and Shredded Parmesan Cheese

In another bowl melt the butter

Dip each pork chop in the butter and then dip in the breadcrumb mixture, coating each side

Place the pork Chops on the baking tray

Add the coated potatoes to the tray around the Pork Chops

Season the Chops and the Potatoes with Salt and Pepper

THIRD STEP:

Place the tray in the oven and bake for 35 to 45 minutes until the Pork Chops are cooked through
