Pineapple Bread

            This bread is so moist and delicious, everyone falls in love with it immediately. Super soft, covered with a pineapple glaze, what is not to like here? Loads of slightly sweet crushed pineapple make this bread irresistible.

            What makes this the perfect food is that I can grab it for a quick breakfast, it makes a great mid-morning snack and is perfect with a cup of tea in the afternoon. It is not a heavy bread, which means that a bedtime snack is not going to make you feel weighed down.

            This bread also makes a wonderful accompaniment to dinners that have a main dish involving Pineapple, such as Pineapple Chicken.

            Why does my bread turn out dense and heavy?

When it is time to add in the second half of the ingredients, I use a wooden spoon and gently stir, just until the ingredients are incorporated. You may have over mixed your batter.

            How do I add extra flavor?

After the bread has baked, poke some holes in the top and brush it with some pineapple syrup. This will give it extra flavor and a little extra moistness.

What do you need to make Pineapple Bread

            ½ cup butter, unsalted and at room temperature

            2 eggs

            ¾ cup sugar

            2 tsp baking powder

            ¼ cup pineapple syrup, drained from the can and saved

            2 tbsp milk

            1 ½ cups all purpose flour

            ⅛ tsp salt

            1 cup crushed pineapple, drained, saving the syrup

Glaze:

            1 cup Confectioners sugar

            1 tsp vanilla extract

            2 tbsp pineapple syrup, saved from the can( you may need more, depending on consistency)

How to make Pineapple Bread

FIRST STEP:

Preheat the oven to 350* and grease an 8×4 loaf pan

In a large bowl, mix together the sugar and butter until it is fluffy

Add in the eggs, one at a time, beating after each

SECOND STEP:

In another bowl, mix the flour with the baking powder and salt

Add in the pineapple syrup to the butter mix, then add half of the flour mix.

Gently mix this together and slowly add in the remaining flour, stirring continuously.

THIRD STEP:

Add in the milk and stir one more time.

Gently fold in the crushed pineapple

FOURTH STEP:

Pour the batter into the prepared pan and place on the center rack in preheated oven

Bake for 50 to 55 minutes until set in the middle and a toothpick comes out clean.

Let sit in the pan for 10 minutes

Turn out onto a cooling rack to finish cooling

FIFTH STEP:

Make the glaze and slowly pour it over the bread. If you want your glaze to remain somewhat thick, be sure to wait until the bread is completely cooled down before pouring the glaze on top
